Jeste li posljednjih dana po društvenim mrežama primijetili mnoštvo objava na temu pizze rustice? Ne, nije to ona 'seljačka' pizza s pancetom i crvenim lukom, nego slana pita koja s u Italiji sprema u vrijeme Uskrsa.
Poznata je i kao torta pasqualina, a svima kojima je od uskršnje gozbe preostalo šunke, jaja i sira, ovaj će recept doći kao naručen.

Malo je obilatiji, pa ga slobodno prepolovite ako ne volite hladnu slanu pitu (postoji li uopće netko takav?).
A evo i par savjeta po pitanju sastojaka. Nije li vam pri ruci ricotta, 'pomozite se' kombinacijom kiselog vrhnja i sirnog namaza, sir provolone možete zamijeniti kravljim sirom koji se dobro topi, pecorino parmezanom, a nemate li sopresatu, uzmite 'zimsku' ili slični suhomesnati proizvod.

720 grama brašna
450 grama maslaca
5 jaja
300 mililitara vrlo hladne vode
1/4 žličice soli
Nadjev:
300 grama pršuta ili pancete
300 grama salame sopresate
220 grama šunke
220 grama sira mozarella
220 grama sira provolone
900 grama sira ricotta
150 grama sira pecorino
11 jaja
sol, papar
Za tijesto narežite maslac na kockice pa ga pomiješajte s brašnom i soli. Kad dobijete mrvičastu smjesu dodajte jaja pa izmijesite. Pomalo dodajite vodu. Dobit ćete prhko tijesto koje treba pustiti da se odmori oko pola sata.
Za to vrijeme narežite suhomesnate proizvode na kockice. Isto napravite s mozarellom i provoloneom, a pecorino naribajte. 10 jaja (jedno će vam trebati za premazivanje) razbijte i promiješajte, dodajte im ricottu, sol i papar. Dobro promiješajte pa dodajte sir i suhomesnate proizvode.
Zagrijte pećnicu na 160 stupnjeva, tijesto podijelite na 3 trećine. Dvije će vam trebati za podlogu, treća će ići na vrh, kao poklopac. Razvaljajte tijesto na pobrašnjenoj površini. Sravite ga u dublji kalup tako da prelazi preko rubova. Ulijte nadjev.
Razvaljajte prteostali dio tijesta pa ga položite na vrh. Odrežite djelove tijesta koji vise preko ruba, a vrh izbockajte vilicom. Stavite ju peći.
Neka se peče oko 45 minuta. Izvadite ju iz pećnice. Razbijte jaje, razmutite ga pa njime premažite vrh pizze rustice. Vratite u pećnicu na još 45 minuta.
Neka se potpuno ohladi prije posluživanja.

Poznata je i kao torta pasqualina, a svima kojima je od uskršnje gozbe preostalo šunke, jaja i sira, ovaj će recept doći kao naručen.

---Nemojte se uopće misliti bi li preostalu šunku i sir radije sačuvali za sendviče, ovdje je riječ o prvoklasnoj poslastici. Pomalo nalik na quiche, ali zapravo potpuno drugačijoj. Kako? Zašto? Isprobajte naš recept pa doznajte.
Malo je obilatiji, pa ga slobodno prepolovite ako ne volite hladnu slanu pitu (postoji li uopće netko takav?).
A evo i par savjeta po pitanju sastojaka. Nije li vam pri ruci ricotta, 'pomozite se' kombinacijom kiselog vrhnja i sirnog namaza, sir provolone možete zamijeniti kravljim sirom koji se dobro topi, pecorino parmezanom, a nemate li sopresatu, uzmite 'zimsku' ili slični suhomesnati proizvod.

Nadjev:
300 grama pršuta ili pancete
300 grama salame sopresate
220 grama šunke
220 grama sira mozarella
220 grama sira provolone
900 grama sira ricotta
150 grama sira pecorino

Za tijesto narežite maslac na kockice pa ga pomiješajte s brašnom i soli. Kad dobijete mrvičastu smjesu dodajte jaja pa izmijesite. Pomalo dodajite vodu. Dobit ćete prhko tijesto koje treba pustiti da se odmori oko pola sata.
Za to vrijeme narežite suhomesnate proizvode na kockice. Isto napravite s mozarellom i provoloneom, a pecorino naribajte. 10 jaja (jedno će vam trebati za premazivanje) razbijte i promiješajte, dodajte im ricottu, sol i papar. Dobro promiješajte pa dodajte sir i suhomesnate proizvode.
Zagrijte pećnicu na 160 stupnjeva, tijesto podijelite na 3 trećine. Dvije će vam trebati za podlogu, treća će ići na vrh, kao poklopac. Razvaljajte tijesto na pobrašnjenoj površini. Sravite ga u dublji kalup tako da prelazi preko rubova. Ulijte nadjev.
Razvaljajte prteostali dio tijesta pa ga položite na vrh. Odrežite djelove tijesta koji vise preko ruba, a vrh izbockajte vilicom. Stavite ju peći.
Neka se peče oko 45 minuta. Izvadite ju iz pećnice. Razbijte jaje, razmutite ga pa njime premažite vrh pizze rustice. Vratite u pećnicu na još 45 minuta.
Neka se potpuno ohladi prije posluživanja.
