Nevjerojatno je kako se pojedini okusi vežu baš uz pojedine datume. Sirnica uz Uskrs, pašte uz Božić, a mandulat uz fjeru svetoga Duje.
Peti misec je misec od mandulata. U Splitu.
Da pitate Talijane, oni bi se odmah naljutili jer je njima mandulat pravi pravcati božićni kolačić.
Ako ne znate, a to je stvarno gotovo pa nevjerojatno ako ste odgojeni u Splitu, mandulat je slastica stvorena od meda, bjelanjaka i badema. Specifična je baš za Split, ali vjerojatno je stigla kod nas pod utjecajem Talijana. Oni, naime, potpuno istu slatkariju nazivaju "torrone". Imaju je, i vole, i u Španjolskoj, tamo se zove "turrón", a u Francuskoj nosi ime "nougat". No, gdje god bila i kako god se zvala – predivna je.
Ovaj naš splitski, "Bobisov" mandulat, tradicionalan je, kako nekada, tako i sad. U njemu ćete uvijek naći badem, premda se u svijetu koriste za njega svi orašasti plodovi. U nastojanju da klasičnoj slastici daju moderan dodir, naši su pašticijeri odlučili napraviti mandulat u tri nova različita okusa. Nećemo vam otkriti koja – isprobajte i istražite sami. Nama je dovoljna "muka" bila gledati kako se miješaju mirisne komponente toga "čuda od slatkog"... Vjerujte na riječ, ne može čovjek vjerovati koliko se slasti nađe u jednoj jedinoj terini. Živi dokaz kako tradicionalnim, iskušanim, starim receptima, na kojima su odrastale generacije, baš ništa ne nedostaje.
Svjedočili smo kako pjenasta smjesa bajama, šećera, meda i bjelanjaka postaje jedno. Prvi se dio, šećer i bjelanjci, kuha na pari, uz neprestano miješanje, potom se dodaju ostali sastojci, polako, da bi se potpuno sljubljeni i vreli izlijevali na oblatne. Ovaj dio procesa proizvodnje iziskuje vrijeme i posvećenost. Na njih tada slažemo teret, dobro se pritisnu i kada su dovoljno ohlađeni, režu se na kockice ili prutiće.
Prutići su ono na što smo naviknuli.
"Tuđi čovik nikad neće znati" koji je poseban gušt polizati prste nakon što "smlatiš" mandulat. Nije pretjerano kazati kako osvaja sva osjetila. Miriše božanstveno, tekstura mu je vrhunska – kombinacija glatke kreme i krupno narezanih bajama, pod zubima hrska oblatna, a o okusima se – baš raspravlja, jer na nepcu ostaje još dugo, taman toliko koliko vam treba za otvoriti – drugu kutiju. Idealan za poslije treninga
Med, bjelanjak, badem... Odvojeno ove namirnice idealne su za nekoga tko se bavi sportom. Em su zdrave, em ukusne. No, potpisnik ovih redaka nikada ih nije konzumirao spojene. Mandulat sam uvijek doživljavao nekako na razini krokanta, nekako "mond". Kao slastice za slavlja... No, jednom prilikom sam naletio na pravi izvor znanja.
– To ti je idealno za posli treninga. A ne oni tvoji praškovi šta ih piješ stalno – dobacila mi je majka jednom u nemoćnom pokušaju da me odvrati od proteinskih shakeova koje sam redovito "trusio" nakon treninga.
– Ima ti meda, bajama i bjelanjaka – dobacila je.
Uslijedila je ona faca, skupljene usne i podignute obrve.
– Ma zamisli – pomislio sam i ubrzo doznao recept za pripremu mandulata.
Od tada mi s vremena na vrijeme služi kao idealan obrok neposredno prije ili poslije treninga. Digne šećer, unesem nešto proteina, a i ukusan je.
Od "mond" doživljaja ove slastice dočekao sam da je "trusim" rukama još prljavim od utega...

Malo iz povijesti
Zainteresirao nas je podatak kako se mandulat spominje još u vrijeme starih Rimljana. Navodno se može naći u zapisima Tita Livija, pa kažu kako mu ime potječe od latinske riječi "torreo", što znači "tostirati, zapeći", a upravo to je ono što se radi s orašastim plodovima prije dodavanja stučenim bjelanjcima. Dalje, povjesničari vele kako su u 11. stoljeću Arapi proširili ovu slasticu diljem Mediterana, sve do Katalonije, gdje se nalaze prvi zapisi o mandulatu, iz 1221. godine.

Nevjerojatno je kako se pojedini okusi vežu baš uz pojedine datume. Sirnica uz Uskrs, pašte uz Božić, a mandulat uz fjeru svetoga Duje.
Peti misec je misec od mandulata. U Splitu.
Da pitate Talijane, oni bi se odmah naljutili jer je njima mandulat pravi pravcati božićni kolačić.
Ako ne znate, a to je stvarno gotovo pa nevjerojatno ako ste odgojeni u Splitu, mandulat je slastica stvorena od meda, bjelanjaka i badema. Specifična je baš za Split, ali vjerojatno je stigla kod nas pod utjecajem Talijana. Oni, naime, potpuno istu slatkariju nazivaju "torrone". Imaju je, i vole, i u Španjolskoj, tamo se zove "turrón", a u Francuskoj nosi ime "nougat". No, gdje god bila i kako god se zvala – predivna je.
Ovaj naš splitski, "Bobisov" mandulat, tradicionalan je, kako nekada, tako i sad. U njemu ćete uvijek naći badem, premda se u svijetu koriste za njega svi orašasti plodovi. U nastojanju da klasičnoj slastici daju moderan dodir, naši su pašticijeri odlučili napraviti mandulat u tri nova različita okusa. Nećemo vam otkriti koja – isprobajte i istražite sami. Nama je dovoljna "muka" bila gledati kako se miješaju mirisne komponente toga "čuda od slatkog"... Vjerujte na riječ, ne može čovjek vjerovati koliko se slasti nađe u jednoj jedinoj terini. Živi dokaz kako tradicionalnim, iskušanim, starim receptima, na kojima su odrastale generacije, baš ništa ne nedostaje.
Svjedočili smo kako pjenasta smjesa bajama, šećera, meda i bjelanjaka postaje jedno. Prvi se dio, šećer i bjelanjci, kuha na pari, uz neprestano miješanje, potom se dodaju ostali sastojci, polako, da bi se potpuno sljubljeni i vreli izlijevali na oblatne. Ovaj dio procesa proizvodnje iziskuje vrijeme i posvećenost. Na njih tada slažemo teret, dobro se pritisnu i kada su dovoljno ohlađeni, režu se na kockice ili prutiće.
Prutići su ono na što smo naviknuli.
"Tuđi čovik nikad neće znati" koji je poseban gušt polizati prste nakon što "smlatiš" mandulat. Nije pretjerano kazati kako osvaja sva osjetila. Miriše božanstveno, tekstura mu je vrhunska – kombinacija glatke kreme i krupno narezanih bajama, pod zubima hrska oblatna, a o okusima se – baš raspravlja, jer na nepcu ostaje još dugo, taman toliko koliko vam treba za otvoriti – drugu kutiju. Idealan za poslije treninga
Med, bjelanjak, badem... Odvojeno ove namirnice idealne su za nekoga tko se bavi sportom. Em su zdrave, em ukusne. No, potpisnik ovih redaka nikada ih nije konzumirao spojene. Mandulat sam uvijek doživljavao nekako na razini krokanta, nekako "mond". Kao slastice za slavlja... No, jednom prilikom sam naletio na pravi izvor znanja.
– To ti je idealno za posli treninga. A ne oni tvoji praškovi šta ih piješ stalno – dobacila mi je majka jednom u nemoćnom pokušaju da me odvrati od proteinskih shakeova koje sam redovito "trusio" nakon treninga.
– Ima ti meda, bajama i bjelanjaka – dobacila je.
Uslijedila je ona faca, skupljene usne i podignute obrve.
– Ma zamisli – pomislio sam i ubrzo doznao recept za pripremu mandulata.
Od tada mi s vremena na vrijeme služi kao idealan obrok neposredno prije ili poslije treninga. Digne šećer, unesem nešto proteina, a i ukusan je.
Od "mond" doživljaja ove slastice dočekao sam da je "trusim" rukama još prljavim od utega...

Malo iz povijesti
Zainteresirao nas je podatak kako se mandulat spominje još u vrijeme starih Rimljana. Navodno se može naći u zapisima Tita Livija, pa kažu kako mu ime potječe od latinske riječi "torreo", što znači "tostirati, zapeći", a upravo to je ono što se radi s orašastim plodovima prije dodavanja stučenim bjelanjcima. Dalje, povjesničari vele kako su u 11. stoljeću Arapi proširili ovu slasticu diljem Mediterana, sve do Katalonije, gdje se nalaze prvi zapisi o mandulatu, iz 1221. godine.
