Neslužbene najave kako bi Vlada u paketu mjera danas mogla zamrznuti cijene mlijeka (sada 9,5 kuna), brašna (7 kuna), ulja (18) i šećera (10), koje su u proteklih godinu dana najviše narasle, potrošači su dočekali s olakšanjem, iako nije riječ o proizvodima koji najviše opterećuju kućni proračun.

Novost koja se spominje je miješano mljeveno meso koje se prodaje u dućanima u raznim pakiranjima u plastičnim kadicama, a u mesnicama se može kupiti svježe mljeveno od komada mesa.

Međutim, kako i sam naziv kaže, riječ je o "miješanom mljevenom", a takvog mesa ima svježeg i smrznutog, ima ga u raznim pakiranjima i od desetak različitih vrsta mesa. Najpopularnije je ono od govedine i svinjetine, a posljednjih ga je godina sve više od piletine, puretine, pa sve do teletine ili divljači.

I stručnjacima u mesnoj industriji s kojima smo razgovarali nije posve jasno koje miješano meso misle u Vladi zaštititi kao socijalnu kategoriju pa nisu željeli nagađati prije detaljnijeg pojašnjenja. No, neslužbeno mnogi od njih pretpostavljaju da bi bilo najbolje uvesti jedinstvenu cijenu za standardno obiteljsko pakiranje od 850 grama miješanog goveđeg i junećeg mesa.

Ono je dovoljno za ručak ako se prave najpopularnija jela poput punjene paprike i sarme. Standardna je cijena oko 40 kuna, a na akcijama se često nađe i za desetak kuna manje, piše Jutarnji list.

Branko Bobetić, direktor Croatistočara, kaže kako je kod nas problem to što trgovački lanci formiraju svoje cijene bez konkretnog uvida u strukturu formiranja.

- Mi nemamo transparentni sustav praćenja cijena poput Francuza koji to imaju od polja do trgovačkih polica. Tako u svim fazama možete doznati preko Agrimera koja je veleprodajna cijena, kolika je nakon marže, kolika nakon PDV-a, a kolika maloprodajna. Kada smo željeli nešto slično uvesti kod nas, nismo baš bili dočekani s oduševljenjem kod trgovaca, ali ni kod administracije - kaže Bobetić.

Ističe kako je kod miješanog mljevenog mesa vrlo važno pravilno deklariranje svih sastojaka i aditiva koji se dodaju u proizvodnji. Naime, javna je tajna, a to su potvrdili i brojni mesari koji su radili na pakiranju miješanog mljevenog mesa u nekim industrijskim pogonima, da se ono sastoji od druge kategorije mesa, uglavnom dijelova koji su često i usitnjeni i otkošteni ostali od obrade za kvalitetnije komade. Nerijetko se dodaju i soja te razni aditivi i poboljšivači okusa, što mora pisati na deklaraciji.

U udruzi Croatiastočar upozoravaju da Hrvatskoj treba transparentan sustav praćenja cijena kao u Francuskoj, koja to ima od polja do trgovačkih polica

To je jasno i potrošačima, ali i službama odgovornima za nadzor kvalitete takvog mesa, koje su propisale udio ukupne masti i kolagena (vezivnog tkiva). Tako je istraživanje skupine autora okupljenih oko Veterinarskog instituta 2019. godine obavilo nadzor miješanog mljevenog mesa na zagrebačkom području. Nakon skupljanja i analize uzoraka utvrđeno je da njih čak 21 posto ne udovoljava propisanim parametrima.

Stoga potrošači koji imaju takvu platežnu moć mljeveno meso kupuju u mesnicama od komada mesa koji se posebno melju. Dakako, za uobičajenu mješavinu od pola kilograma juneće (33 kune) i pola kilograma svinjske (20 kuna) plećke i ukupna cijena je nešto veća, piše  Jutarnji list.

Ni mesarima na tržnici nije jasno na kakvo miješano meso misle u Vladi, tim više što godinama rijetke mesnice u prodaji imaju unaprijed mljeveno meso. Nekada je ono bilo u uobičajenom dnevnom prodajnom asortimanu po nižim cijenama, a kada su ga kupci počeli izbjegavati, nestalo je s tacni i pladnjeva.

Valja podsjetiti da su Mađarska i Srbija početkom krize zbog ukrajinskog rata u svojim dućanima zamrznule cijene osnovnih namirnica, a učinci se vide i po pojačanom prekograničnom šopingu u Mađarsku. Za usporedbu, u Mađarskoj mlijeko stoji šest kuna, brašno četiri, ulje deset, a šećer pet kuna.

Tamo je uvedena i zabrana izvoza strateških žitarica, poput kukuruza koji je najvažniji za sve skuplju stočnu hranu. I čelnici Baby Beefa, vodeće udruge koja okuplja proizvođače junećeg mesa, nedavno su od Vlade tražili zabranu izvoza kukuruza čiji je urod ove godine značajno podbacio, ali ga ima za dovoljno domaće potrebe.

Boje se da bi se kukuruz zbog velike svjetske cijene mogao značajnije izvesti u Italiju, koja je opustošena sušom, a poslije ćemo ga morati skuplje uvoziti. To bi moglo ugroziti stočarsku proizvodnju i još više povećati cijenu junećeg mesa. Tada bi mogle postati i upitne ove mjere Vlade oko zamrzavanja cijene miješanog mesa za sarmu koju, očito je, kao i Ljubo Jurčić, preporučuju narodu kao recept za premošćenje inflatorne krize, piše  Jutarnji list.

Neslužbene najave kako bi Vlada u paketu mjera danas mogla zamrznuti cijene mlijeka (sada 9,5 kuna), brašna (7 kuna), ulja (18) i šećera (10), koje su u proteklih godinu dana najviše narasle, potrošači su dočekali s olakšanjem, iako nije riječ o proizvodima koji najviše opterećuju kućni proračun.

Novost koja se spominje je miješano mljeveno meso koje se prodaje u dućanima u raznim pakiranjima u plastičnim kadicama, a u mesnicama se može kupiti svježe mljeveno od komada mesa.

Međutim, kako i sam naziv kaže, riječ je o "miješanom mljevenom", a takvog mesa ima svježeg i smrznutog, ima ga u raznim pakiranjima i od desetak različitih vrsta mesa. Najpopularnije je ono od govedine i svinjetine, a posljednjih ga je godina sve više od piletine, puretine, pa sve do teletine ili divljači.

I stručnjacima u mesnoj industriji s kojima smo razgovarali nije posve jasno koje miješano meso misle u Vladi zaštititi kao socijalnu kategoriju pa nisu željeli nagađati prije detaljnijeg pojašnjenja. No, neslužbeno mnogi od njih pretpostavljaju da bi bilo najbolje uvesti jedinstvenu cijenu za standardno obiteljsko pakiranje od 850 grama miješanog goveđeg i junećeg mesa.

Ono je dovoljno za ručak ako se prave najpopularnija jela poput punjene paprike i sarme. Standardna je cijena oko 40 kuna, a na akcijama se često nađe i za desetak kuna manje, piše Jutarnji list.

Branko Bobetić, direktor Croatistočara, kaže kako je kod nas problem to što trgovački lanci formiraju svoje cijene bez konkretnog uvida u strukturu formiranja.

- Mi nemamo transparentni sustav praćenja cijena poput Francuza koji to imaju od polja do trgovačkih polica. Tako u svim fazama možete doznati preko Agrimera koja je veleprodajna cijena, kolika je nakon marže, kolika nakon PDV-a, a kolika maloprodajna. Kada smo željeli nešto slično uvesti kod nas, nismo baš bili dočekani s oduševljenjem kod trgovaca, ali ni kod administracije - kaže Bobetić.

Ističe kako je kod miješanog mljevenog mesa vrlo važno pravilno deklariranje svih sastojaka i aditiva koji se dodaju u proizvodnji. Naime, javna je tajna, a to su potvrdili i brojni mesari koji su radili na pakiranju miješanog mljevenog mesa u nekim industrijskim pogonima, da se ono sastoji od druge kategorije mesa, uglavnom dijelova koji su često i usitnjeni i otkošteni ostali od obrade za kvalitetnije komade. Nerijetko se dodaju i soja te razni aditivi i poboljšivači okusa, što mora pisati na deklaraciji.

To je jasno i potrošačima, ali i službama odgovornima za nadzor kvalitete takvog mesa, koje su propisale udio ukupne masti i kolagena (vezivnog tkiva). Tako je istraživanje skupine autora okupljenih oko Veterinarskog instituta 2019. godine obavilo nadzor miješanog mljevenog mesa na zagrebačkom području. Nakon skupljanja i analize uzoraka utvrđeno je da njih čak 21 posto ne udovoljava propisanim parametrima.

Stoga potrošači koji imaju takvu platežnu moć mljeveno meso kupuju u mesnicama od komada mesa koji se posebno melju. Dakako, za uobičajenu mješavinu od pola kilograma juneće (33 kune) i pola kilograma svinjske (20 kuna) plećke i ukupna cijena je nešto veća, piše  Jutarnji list.

Ni mesarima na tržnici nije jasno na kakvo miješano meso misle u Vladi, tim više što godinama rijetke mesnice u prodaji imaju unaprijed mljeveno meso. Nekada je ono bilo u uobičajenom dnevnom prodajnom asortimanu po nižim cijenama, a kada su ga kupci počeli izbjegavati, nestalo je s tacni i pladnjeva.

Valja podsjetiti da su Mađarska i Srbija početkom krize zbog ukrajinskog rata u svojim dućanima zamrznule cijene osnovnih namirnica, a učinci se vide i po pojačanom prekograničnom šopingu u Mađarsku. Za usporedbu, u Mađarskoj mlijeko stoji šest kuna, brašno četiri, ulje deset, a šećer pet kuna.

Tamo je uvedena i zabrana izvoza strateških žitarica, poput kukuruza koji je najvažniji za sve skuplju stočnu hranu. I čelnici Baby Beefa, vodeće udruge koja okuplja proizvođače junećeg mesa, nedavno su od Vlade tražili zabranu izvoza kukuruza čiji je urod ove godine značajno podbacio, ali ga ima za dovoljno domaće potrebe.

Boje se da bi se kukuruz zbog velike svjetske cijene mogao značajnije izvesti u Italiju, koja je opustošena sušom, a poslije ćemo ga morati skuplje uvoziti. To bi moglo ugroziti stočarsku proizvodnju i još više povećati cijenu junećeg mesa. Tada bi mogle postati i upitne ove mjere Vlade oko zamrzavanja cijene miješanog mesa za sarmu koju, očito je, kao i Ljubo Jurčić, preporučuju narodu kao recept za premošćenje inflatorne krize, piše  Jutarnji list.
