Najskuplji je začin na svijetu, naše mu tlo itekako odgovara, ali hrvatski uzgajivači mogu se nabrojiti na prste jedne ruke. Riječ je o šafranu, a berba je upravo u tijeku. Mada bi se mnogi lako pomamili kada čuju da se gram prodaje za 20 eura, brzo ih ohladi spoznaja da za gram ovog začina treba ubrati od 140 do čak 180 cvjetova. I to ručno! Cvijet po cvijet, u zoru.

A jedini dalmatinski uzgajivači šafrana nalaze se u Žeravi, piše HRT. Riječ je o Goranu Paleki i Zvonimiru Baričeviću koji ove godine računaju na berbu od 30-ak tisuća cvjetova, a šafran kao začin plasiraju na zadarsko gastronomsko tržište.: 

“Ono šafrana što smo imali prošle godine, prve ekonomski isplative godine, sve smo riješili u Zadru, u tri restorana kod kuhara Saše Begana i Josipa Vrsaljka.”

“Konkurencija, neka zdrava, je uvijek dobrodošla, ali mi konkurencije praktički nemamo. A ova roba stvarno ima kupce.”

Goran i Zvonimir prijatelji su još iz srednjoškolskih klupa, iz tog vremena i datira ideja o zajedničkom bavljenju poljoprivredom.

Šafran je, osim skupog začina, u njihovom slučaju postao i neprocjenjivo vezivno sredstvo: 

“Ušli smo u neke životne godine kada je tempo 300 kilometara na sat i da nismo krenuli u taj šafran, ja ne znam kako bismo se uopće vidjeli. Ovo te doslovno prisili. Na kraju, on je frend s mojim starim, ja čistim šafran s njegovom starom...”

U nijednom poljoprivrednom scenariju nije sve idealno, pa tako ni ovdje. Bilo bi super, kažu, kada bi ih država, odnosno Ministarstvo poljoprivrede prepoznalo kroz poticaje: 

“Potpore šafran ne vide. Boduje se kao začinsko bilje, možda stepenicu iznad pašnjaka. Mislimo da bismo mogli imati potporu ako uvrstimo šafranu u neku drugu kategoriju, pa makar to bilo cvijeće“, kažu za HRT.

Potpora bi im mnogo značila. Uložili bi – kažu - sredstva prije svega u ograđivanje zemljišta i sjeme. I time nastavili pozitivnu priču o šafranu. A nastavit će ju i ovako, proizvodnjom najskupljeg začina na svijetu u Žeravi.

Najskuplji je začin na svijetu, naše mu tlo itekako odgovara, ali hrvatski uzgajivači mogu se nabrojiti na prste jedne ruke. Riječ je o šafranu, a berba je upravo u tijeku. Mada bi se mnogi lako pomamili kada čuju da se gram prodaje za 20 eura, brzo ih ohladi spoznaja da za gram ovog začina treba ubrati od 140 do čak 180 cvjetova. I to ručno! Cvijet po cvijet, u zoru.

A jedini dalmatinski uzgajivači šafrana nalaze se u Žeravi, piše HRT. Riječ je o Goranu Paleki i Zvonimiru Baričeviću koji ove godine računaju na berbu od 30-ak tisuća cvjetova, a šafran kao začin plasiraju na zadarsko gastronomsko tržište.: 

“Ono šafrana što smo imali prošle godine, prve ekonomski isplative godine, sve smo riješili u Zadru, u tri restorana kod kuhara Saše Begana i Josipa Vrsaljka.”

“Konkurencija, neka zdrava, je uvijek dobrodošla, ali mi konkurencije praktički nemamo. A ova roba stvarno ima kupce.”

Goran i Zvonimir prijatelji su još iz srednjoškolskih klupa, iz tog vremena i datira ideja o zajedničkom bavljenju poljoprivredom.

Šafran je, osim skupog začina, u njihovom slučaju postao i neprocjenjivo vezivno sredstvo: 

“Ušli smo u neke životne godine kada je tempo 300 kilometara na sat i da nismo krenuli u taj šafran, ja ne znam kako bismo se uopće vidjeli. Ovo te doslovno prisili. Na kraju, on je frend s mojim starim, ja čistim šafran s njegovom starom...”

U nijednom poljoprivrednom scenariju nije sve idealno, pa tako ni ovdje. Bilo bi super, kažu, kada bi ih država, odnosno Ministarstvo poljoprivrede prepoznalo kroz poticaje: 

“Potpore šafran ne vide. Boduje se kao začinsko bilje, možda stepenicu iznad pašnjaka. Mislimo da bismo mogli imati potporu ako uvrstimo šafranu u neku drugu kategoriju, pa makar to bilo cvijeće“, kažu za HRT.

Potpora bi im mnogo značila. Uložili bi – kažu - sredstva prije svega u ograđivanje zemljišta i sjeme. I time nastavili pozitivnu priču o šafranu. A nastavit će ju i ovako, proizvodnjom najskupljeg začina na svijetu u Žeravi.
