Prošek ili prosecco. Onaj tko ih je probao, zna da nije riječ o istom alkoholnom piću. Prošek je tradicionalno slatko desertno vino koje se bojom, mirisom, cijenom i načinom konzumacije u potpunosti razlikuje od talijanskog pjenušca prosecca.

Ali, premda i nema puno zajedničkoga osim prva tri slova u nazivu, Talijani godinama blokiraju naš prošek i ne dopuštaju mu oznaku izvornosti i zemljopisnog podrijetla.

Međutim, EU parlament usvojio je Uredbu o oznakama zemljopisnog podrijetla za vino, jaka alkoholna pića i poljoprivredne proizvode, kojom se omogućuje zaštita hrvatskog desertnog vina prošek unatoč snažnom lobiranju interesnih skupina koje su to pokušale spriječiti. Tako se desetogodišnji rat hrvatskih i talijanskih vinara primiče kraju.

Sada je na potezu Europska komisija da što prije potvrdi hrvatski zahtjev i označi prošek kao izvorni hrvatski proizvod.

- Ovo vino ima neprocjenjivo značenje u višestoljetnoj povijesnoj i enološkoj tradiciji Hrvatske, koja ima svako pravo zaštititi ga kao svoj tradicionalni proizvod. Podsjećam, Europska komisija prethodno je zauzela stajalište da homonimija, odnosno sličnost u nazivu, sama po sebi nije dovoljan čimbenik za odbijanje zahtjeva za zaštitu tradicionalnog izraza te da dva slična naziva mogu koegzistirati - ističe EU zastupnik Tomislav Sokol.

Podsjetimo, hrvatsko-talijanski spor oko prošeka traje iz vremena pristupanja Europskoj uniji, kad su talijanski proizvođači prosecca prisilili Hrvatsku na odricanje oznake prošek, iako se naziv "prosecco" odnosi na lagano pjenušavo vino, dok je hrvatski prošek gusto, slatko vino proizvedeno od prezrelih bobica autohtonih dalmatinskih vinskih sorti.

Talijanski prosecco je najčešće i vrlo jeftin, dok je cijena prošeka opravdano visoka zbog složenosti proizvodnje i potrebe za kvalitetnom sirovinom.

Zemljopisna područja uzgoja vinove loze za proizvodnju prošeka su sjeverna Dalmacija, Dalmatinska zagora, srednja i južna Dalmacija i Dingač na Pelješcu.

Bijele sorte za prošek su: pošip bijeli, vugava, maraština, bogdanuša, malvasia dubrovačka bijela, grk, prč, zlatarica, okatica bijela, muškat ruža crni, dok su pak crne sorte: plavac mali, babić, okatac crni, blatina, lasina, trnjak, drnekuša. Dopušteni urod po hektaru je 5000 kilograma, ni grama više.

Ono najzanimljivije je da se grožđe za prošek bere tek kada je prezrelo. Ako je suha jesen, najbolje je ostaviti grožđa na trsu koliko to vremenske prilike dopuštaju kako bi se nakupila maksimalna količina šećera.

Berba se provodi za suha vremena, u plitke kašete (jedan do dva sloja grozdova), kako ne bi došlo do gnječenja i pucanja bobica i curenja soka. Time se sprječava razvoj nepoželjnih mikroorganizama u procesu sušenja.

Prošek ili prosecco. Onaj tko ih je probao, zna da nije riječ o istom alkoholnom piću. Prošek je tradicionalno slatko desertno vino koje se bojom, mirisom, cijenom i načinom konzumacije u potpunosti razlikuje od talijanskog pjenušca prosecca.

Ali, premda i nema puno zajedničkoga osim prva tri slova u nazivu, Talijani godinama blokiraju naš prošek i ne dopuštaju mu oznaku izvornosti i zemljopisnog podrijetla.

Međutim, EU parlament usvojio je Uredbu o oznakama zemljopisnog podrijetla za vino, jaka alkoholna pića i poljoprivredne proizvode, kojom se omogućuje zaštita hrvatskog desertnog vina prošek unatoč snažnom lobiranju interesnih skupina koje su to pokušale spriječiti. Tako se desetogodišnji rat hrvatskih i talijanskih vinara primiče kraju.

Sada je na potezu Europska komisija da što prije potvrdi hrvatski zahtjev i označi prošek kao izvorni hrvatski proizvod.

- Ovo vino ima neprocjenjivo značenje u višestoljetnoj povijesnoj i enološkoj tradiciji Hrvatske, koja ima svako pravo zaštititi ga kao svoj tradicionalni proizvod. Podsjećam, Europska komisija prethodno je zauzela stajalište da homonimija, odnosno sličnost u nazivu, sama po sebi nije dovoljan čimbenik za odbijanje zahtjeva za zaštitu tradicionalnog izraza te da dva slična naziva mogu koegzistirati - ističe EU zastupnik Tomislav Sokol.

Podsjetimo, hrvatsko-talijanski spor oko prošeka traje iz vremena pristupanja Europskoj uniji, kad su talijanski proizvođači prosecca prisilili Hrvatsku na odricanje oznake prošek, iako se naziv "prosecco" odnosi na lagano pjenušavo vino, dok je hrvatski prošek gusto, slatko vino proizvedeno od prezrelih bobica autohtonih dalmatinskih vinskih sorti.

Talijanski prosecco je najčešće i vrlo jeftin, dok je cijena prošeka opravdano visoka zbog složenosti proizvodnje i potrebe za kvalitetnom sirovinom.

Zemljopisna područja uzgoja vinove loze za proizvodnju prošeka su sjeverna Dalmacija, Dalmatinska zagora, srednja i južna Dalmacija i Dingač na Pelješcu.

Bijele sorte za prošek su: pošip bijeli, vugava, maraština, bogdanuša, malvasia dubrovačka bijela, grk, prč, zlatarica, okatica bijela, muškat ruža crni, dok su pak crne sorte: plavac mali, babić, okatac crni, blatina, lasina, trnjak, drnekuša. Dopušteni urod po hektaru je 5000 kilograma, ni grama više.

Ono najzanimljivije je da se grožđe za prošek bere tek kada je prezrelo. Ako je suha jesen, najbolje je ostaviti grožđa na trsu koliko to vremenske prilike dopuštaju kako bi se nakupila maksimalna količina šećera.

Berba se provodi za suha vremena, u plitke kašete (jedan do dva sloja grozdova), kako ne bi došlo do gnječenja i pucanja bobica i curenja soka. Time se sprječava razvoj nepoželjnih mikroorganizama u procesu sušenja.
