Ne želite li više plaćati 3 eura za bočicu kombuche, naučite kako taj zdravi napitak pun dobrih mikroorganizama koji pomažu radu probave, podižu energiju i jačaju imunitet možete nhapraviti sami. Postupak je malo pepav, ali isplati se.

Kupite još tu jednu posljednju (zapravo, trebat će vam kasnije još jedna) bočicu kombuche - upućeni preporučuju kombucha koju proizvodi Ekipa, a lako ju je nabaviti čak i u običnim trgovinama, jer nije pasterizirana i ima dobru kulturu. Zatim skuhajte crni čaj od 4 filtar vrećice (bez dodanih okusa) na 1.6 litara vode, dodajte mu 100 g šećera. Pustite vrećice da se namaču 20-ak minuta.

Prebacite čaj u veću teglu (3,5-5 litara), dodajte mu bočicu kupovne kombuche i pokrijte gazom. Neka odstoji na sobnoj temperaturi, u sjeni, šest tjedana. Ova je faza gotova kad se na vrhu formira debeli sluzavi sloj koji se naziva SCOBY (Symbiotic Culture Of Bacteria and Yeast). Sad ste spremni za prvu fermentaciju.

Za nju će vam trebati 3,3 litre vode, 200 g šećera, 8 vrećica crnog čaja, 480 ml kombuche bez okusa i SCOBY.  Skuhajte čaj, pustite ga da se ohladi na sobnu, čistim rukama prebacite SCOBY na jednako čist tanjur. Ako vam je ovo prva tura kombuche,sačuvajte 2 šalice tekućine u kojoj je SCOBY rastao, a ostatak tekućine izbacite. 

Ulijte zaslađeni čaj u staklenku, a zatim ulijte kombuchu i na kraju dodajte SCOBY. Pokrijte s nekoliko slojeva tkanine i pričvrstite gumicom pa spremite na tamno, mirno mjesto sobne temperature na 6 do 10 dana. Započnite s kušanjem nakon otprilike 6 dana nježno izvlačeći malo čaja papirnatom slamkom (prstom držite čaj u slamčici – nemojte koristiti usta). Trebao bi biti blago slatkast i blago octeno. Što je temperatura zraka viša, kombucha će brže fermentirati. Što duže čaj fermentira, to će biti manje sladak.

Zatim je vrijeme za drugu fermentaciju: sačuvajte 2 šalice iz ove serije da biste ih koristitili kao starter za sljedeću seriju (samo je ostavite u staklenci u kojoj je SCOBY), a ostatak može prijeći u završnu fazu. U ovom koraku mogu se koristiti i drugi čajevi poput zelenog, bijelog, oolong... Ako ćete koristiti voćne čajeve, trebate ih pomiješati s nekoliko vrećica crnog čaja kako bi SCOBY dobio ono što mu je potrebno za razvoj. 

Osim domaće kombucha iz prve fermentacije i čaja po izboru, za drugu fazu trebat će vam i zaslađivač, a to može biti voće, med ili šećer (preporučljivi omjeri su 1 šalica kombuche i 1 do 2 žlice pasiranog voća ili voćnog soka, odnosno 1 do 2 žličice meda ili šećera).

Druga fermentacija odvija se u bočicama, po mogućnosti s hermetičkim zatvaračem koji će spriječiti izlazak karbonizacije. U nedostatku poslužit će i obične staklenke, ali pripazite da ih što bolje zatvorite. Što god da odabrali, postupak teče ovako: ubacite kombuchu u boce/staklenke do razine od oko 4 cm od ruba, dodajte odabrani zaslađivač i dobro zatvorite. Pustite da fermentira na tamnom mjestu pri sobnoj temperaturi, 3 do 10 dana.

Stavite u hladnjak ako želite usporiti proces karbonizacije, ako ne, ne zaboravite ohladite prije posluživanja.

Ekstra savjet koji bi vam mogao dobro doći: kako staklenke u kojima nešto fermentira znaju imati nezgodnu naviku eksplodiranja, jedan dio kombuche stavite u plastičnu bočicu. Kad vidite da se napuhala i da je tvrda kao kamen, znači da je fermentacija gotova. Želite li ipak još malo produžiti fermentaciju zbog okusa, samo odvrnite čepove na svim bočicama da izađe višak ugljik-dioksida.

Ova je faza gotova kad se na vrhu formira debeli sluzavi sloj koji se naziva SCOBY (Symbiotic Culture Of Bacteria and Yeast). Sad ste spremni za prvu fermentaciju.

Za nju će vam trebati 3,3 litre vode, 200 g šećera, 8 vrećica crnog čaja, 480 ml kombuche bez okusa i SCOBY.  Skuhajte čaj, pustite ga da se ohladi na sobnu, čistim rukama prebacite SCOBY na jednako čist tanjur. Ako vam je ovo prva tura kombuche,sačuvajte 2 šalice tekućine u kojoj je SCOBY rastao, a ostatak tekućine izbacite. 

Ulijte zaslađeni čaj u staklenku, a zatim ulijte kombuchu i na kraju dodajte SCOBY. Pokrijte s nekoliko slojeva tkanine i pričvrstite gumicom pa spremite na tamno, mirno mjesto sobne temperature na 6 do 10 dana. Započnite s kušanjem nakon otprilike 6 dana nježno izvlačeći malo čaja papirnatom slamkom (prstom držite čaj u slamčici – nemojte koristiti usta). Trebao bi biti blago slatkast i blago octeno. Što je temperatura zraka viša, kombucha će brže fermentirati. Što duže čaj fermentira, to će biti manje sladak.

Zatim je vrijeme za drugu fermentaciju: sačuvajte 2 šalice iz ove serije da biste ih koristitili kao starter za sljedeću seriju (samo je ostavite u staklenci u kojoj je SCOBY), a ostatak može prijeći u završnu fazu. U ovom koraku mogu se koristiti i drugi čajevi poput zelenog, bijelog, oolong... Ako ćete koristiti voćne čajeve, trebate ih pomiješati s nekoliko vrećica crnog čaja kako bi SCOBY dobio ono što mu je potrebno za razvoj. 

Osim domaće kombucha iz prve fermentacije i čaja po izboru, za drugu fazu trebat će vam i zaslađivač, a to može biti voće, med ili šećer (preporučljivi omjeri su 1 šalica kombuche i 1 do 2 žlice pasiranog voća ili voćnog soka, odnosno 1 do 2 žličice meda ili šećera).

Druga fermentacija odvija se u bočicama, po mogućnosti s hermetičkim zatvaračem koji će spriječiti izlazak karbonizacije. U nedostatku poslužit će i obične staklenke, ali pripazite da ih što bolje zatvorite. Što god da odabrali, postupak teče ovako: ubacite kombuchu u boce/staklenke do razine od oko 4 cm od ruba, dodajte odabrani zaslađivač i dobro zatvorite. Pustite da fermentira na tamnom mjestu pri sobnoj temperaturi, 3 do 10 dana.

Stavite u hladnjak ako želite usporiti proces karbonizacije, ako ne, ne zaboravite ohladite prije posluživanja.

Ekstra savjet koji bi vam mogao dobro doći: kako staklenke u kojima nešto fermentira znaju imati nezgodnu naviku eksplodiranja, jedan dio kombuche stavite u plastičnu bočicu. Kad vidite da se napuhala i da je tvrda kao kamen, znači da je fermentacija gotova. Želite li ipak još malo produžiti fermentaciju zbog okusa, samo odvrnite čepove na svim bočicama da izađe višak ugljik-dioksida.

Ne želite li više plaćati 3 eura za bočicu kombuche, naučite kako taj zdravi napitak pun dobrih mikroorganizama koji pomažu radu probave, podižu energiju i jačaju imunitet možete nhapraviti sami. Postupak je malo pepav, ali isplati se.

Kupite još tu jednu posljednju (zapravo, trebat će vam kasnije još jedna) bočicu kombuche - upućeni preporučuju kombucha koju proizvodi Ekipa, a lako ju je nabaviti čak i u običnim trgovinama, jer nije pasterizirana i ima dobru kulturu. Zatim skuhajte crni čaj od 4 filtar vrećice (bez dodanih okusa) na 1.6 litara vode, dodajte mu 100 g šećera. Pustite vrećice da se namaču 20-ak minuta.

Prebacite čaj u veću teglu (3,5-5 litara), dodajte mu bočicu kupovne kombuche i pokrijte gazom. Neka odstoji na sobnoj temperaturi, u sjeni, šest tj...
