Kako se radi soparnik?

Sastojci za 8 osoba:

Brašno, maslinovo ulje, voda, sol, blitva, peršin, bijeli luk, kapula, navodi jedna Poljičanka na portalu Coolinarika.

PRIPREMA:

1.

Starija blitva se opere, osuši i izreže na uske trakice. Kapula (crveni luk) i peršin se sitno izrežu.

2.

Od 1 kg brašna, soli i mlake vode zamijesi se mekanije tijesto i podijeli na dva dijela. Na sinijama (okruglim daskama promjera cca 80-90 cm) se lazanjurom (okrugli tanki štap za valjanje tijesta) razvaljaju tanka tijesta tako da padaju preko ruba sinije oko 4-5cm.

U većoj posudi se začini i dobro promiješa oko 2 kg blitve s jednom većom kapulom, 3 dl miješanog ulja (više maslinova), soli i peršinom. Blitva se ravnomjerno rasporedi na razvaljano tijesto. Drugo tijesto se namota na lazanjur i prekrije po blitvi. Rubovi tijesta se uvrću prema unutra da izgleda kao pleter.

Tako pripremljeni soparnik se pospe kukuruznom krupicom (samo malo da lakše sklizne sa sinije) i poklopi drugom sinijom. Sinije sa soparnikom se okrenu naopako.

Dok se ovo pripremalo, na kominu je već gorjela dobra vatra jer mora biti dobro ugrijano. Žar se razgrne sa strane i komin dobro omete. Soparnik se lagano sa sinije ispusti na komin. Prekrije se žarom i peče 15-20 minuta. Kad je gotov, lagano se izvuče na siniju i dobro opuše od pepela. Okrene se na drugu stranu i ostavi da se malo ohladi.

6.

Sitno se isjecka bijeli luk (po želji) i dobro utrlja u koru. Zatim se namaže s 3dl maslinova ulja. Reže se u obliku rombova cca10 cm.

Posluživanje:

Poslužuje se na svadbama i drugim svečanostima uz sir i pršut kao hladno predjelo.

Od 1 kg brašna, soli i mlake vode zamijesi se mekanije tijesto i podijeli na dva dijela. Na sinijama (okruglim daskama promjera cca 80-90 cm) se lazanjurom (okrugli tanki štap za valjanje tijesta) razvaljaju tanka tijesta tako da padaju preko ruba sinije oko 4-5cm.

U većoj posudi se začini i dobro promiješa oko 2 kg blitve s jednom većom kapulom, 3 dl miješanog ulja (više maslinova), soli i peršinom. Blitva se ravnomjerno rasporedi na razvaljano tijesto. Drugo tijesto se namota na lazanjur i prekrije po blitvi. Rubovi tijesta se uvrću prema unutra da izgleda kao pleter.

Tako pripremljeni soparnik se pospe kukuruznom krupicom (samo malo da lakše sklizne sa sinije) i poklopi drugom sinijom. Sinije sa soparnikom se okrenu naopako.

Dok se ovo pripremalo, na kominu je već gorjela dobra vatra jer mora biti dobro ugrijano. Žar se razgrne sa strane i komin dobro omete. Soparnik se lagano sa sinije ispusti na komin. Prekrije se žarom i peče 15-20 minuta. Kad je gotov, lagano se izvuče na siniju i dobro opuše od pepela. Okrene se na drugu stranu i ostavi da se malo ohladi.

Sitno se isjecka bijeli luk (po želji) i dobro utrlja u koru. Zatim se namaže s 3dl maslinova ulja. Reže se u obliku rombova cca10 cm.

Posluživanje:

Poslužuje se na svadbama i drugim svečanostima uz sir i pršut kao hladno predjelo.
