Po mom mišljenju srdela je kraljica ribe, bila ona soljena, frigana, marinirana oli spremljena na neki drugi način. Srdela je dušu dala i za takozvane fišpiknike za turiste jerbo se more ist rukon i nema opasnih kosti ča moredu nekome zapet u grlu. Još kad je stvarno friška, prava je delicija. Doduše, kako za koga...

Primjerice, Belgijci bi tili bit bonguštaji, ali se baš meni dogodilo da nisu tili ist najboju srdelu ča su mogli dobit. Naime, ka turistički vodič neko san vrime radija za neku belgijsku firmu i jenon ima fišpiknik na brodu.

Barba je ima prijateja ribara u Izoli pa smo tamo stali da kupimo srdele ča su još samo koju uru prije plivale morem. Da sve bude najboje za bonguštaje naš je kogo ribu ispeka samo toliko da je meso odstupilo od kosti, ali je sav šug osta u njemu. Bila je to stvarno srdela za Oskara, ali su se gosti snebivali i nisu tili jist. Ka, ono premalo je pečena...

Koje budale...

- Dragi moji gosti, ova riba van je friška da friškija ne more bit, a pečena je baš toliko da je sve najboje ostalo u njoj. Japanci ribu jidu sirovu, a vaši susidi Olandeži haringu, koja je veća od srdele, imadu sirovu za najveći specijalitet ča ga zovu matjes. I moja dva mala sina srdelu jedu sirovu, ali ako baš želite, mi ćemo ribu dopeć, pa i karbonizirat - reka san in.

Onda su skoro svi ribu vratili da se ka ono ispeče kako triba. Budale, tili smo in napravit veliku uslugu, a oni tražu da im ribu iskvarimo. Pa neka im bude kad neće da slušaju kad mi i dica jedu srdelu.

Sićan se, bilo je to jednom početkom veljače kad nije bilo posla i moga san doma kuvat. Dobija san friške srdele i počeja ih čistit kad je moj stariji sin, ča je tek prohoda, ali još nije počeja govorit, doša do mene i otvorija kljun ka galebić. Kad šta, oće jist ribu.

Nije tija čekat pa san na stol poli sebe stavija pjatić sa maslinovim uljem, srdeli skinija kožu, odreza filet, provuka ga kroz ulje i stavija malome u kljun. Napravija je on onda đir po stanu, vratija se natrag i tražija još. Izija je tako 3 srdele i nije mu smetalo ča san ih zaboravija posolit.

Fešta nacionale

Dogodine je i mlađi počeja jist sirove srdele. Još dok su oba išli u vrtić njihova mater i ja smo se rastali pa su nekoliko godin dolazili kod mene jednom tjedno na ručak i naravno jili srdele. I danas, kad su obadva prošli dvadesetu, volidu doć kod mene par puti godišnje na feštu nacionale. Na stolu su srdele i moja riblja pašteta, pa nan to vridi više od svega drugoga.

Tako 7-8 većih srdela ugrijen na malo maslinova ulja u padeli toliko da meso mogu odvojit od kosti, a da ostane meko i sočno. Stavin to u pinjatu za salatu, dodam soli, papra, crvene paprike i između dlanova u prašinu satrte sušene bazilike. Sve to polako mućkan pirunom, dodajem maslinova ulja i onda najmanju konzervu tune. Dodan 3 mlječna namaza i to, ako je moguće, jednog sa češnjakom, jednog s zelenim povrćen i jednog običnog, pa sve zamišan.

Boja od medičine

Kad sinovi dojdu, skupa guštamo. Kruh narežemo na male bokuniće i svaki namažemo pašteton na debelo, gori stavimo fetu kapule i na to filet od srdele oliti sardona ča ih isto spreman. A one najboje srdele, ka i nekada, filetiran bez kože. Ne tribamo mi neku finu i skupu spizu, nama je srdela stvarno krajica stola, spiza za velike fešte.

Kad sam sam volin je friganu, ali malo drukčije nego drugi. Nikad je ne solin nego solin kukuruzno brašno u koje ih ubacim prije friganja. U padelu mi stane duzina, a stavljam ih ih dok se ulje još grije pa jedva malo procvrče. Kad stavin zadnju, već okrećem prvu i još pri nego izvadin zadnju, ugasin vatru. Salata i crno vino uz to i sve paše.

Volin srdelu i na salatu. Dva kuvana kumpirića, malo paštete, po duzine fileta isjeckanih na bokuniće, pokoja kapara, malo maslinova ulja i zelena salata oliti radić i onda iman gurmansku večeru. Iman ja još dosta riceta za srdelu u marinadi, ali se uvik sitin da su mi doturi govorili kako neću dočekat 40-u.

Malo morgen, prvi sin mi se rodija godinu dana posli krajnjeg roka života. Ko će ga znat koliko će mi još godin dati srdela na pjatu, ali svakako više nego ikakva medičina.

Po mom mišljenju srdela je kraljica ribe, bila ona soljena, frigana, marinirana oli spremljena na neki drugi način. Srdela je dušu dala i za takozvane fišpiknike za turiste jerbo se more ist rukon i nema opasnih kosti ča moredu nekome zapet u grlu. Još kad je stvarno friška, prava je delicija. Doduše, kako za koga...

Primjerice, Belgijci bi tili bit bonguštaji, ali se baš meni dogodilo da nisu tili ist najboju srdelu ča su mogli dobit. Naime, ka turistički vodič neko san vrime radija za neku belgijsku firmu i jenon ima fišpiknik na brodu.

Barba je ima prijateja ribara u Izoli pa smo tamo stali da kupimo srdele ča su još samo koju uru prije plivale morem. Da sve bude najboje za bonguštaje naš je kogo ribu ispeka samo toliko da je meso odstupilo od kosti, ali je sav šug osta u njemu. Bila je to stvarno srdela za Oskara, ali su se gosti snebivali i nisu tili jist. Ka, ono premalo je pečena...

Koje budale...

- Dragi moji gosti, ova riba van je friška da friškija ne more bit, a pečena je baš toliko da je sve najboje ostalo u njoj. Japanci ribu jidu sirovu, a vaši susidi Olandeži haringu, koja je veća od srdele, imadu sirovu za najveći specijalitet ča ga zovu matjes. I moja dva mala sina srdelu jedu sirovu, ali ako baš želite, mi ćemo ribu dopeć, pa i karbonizirat - reka san in.

Onda su skoro svi ribu vratili da se ka ono ispeče kako triba. Budale, tili smo in napravit veliku uslugu, a oni tražu da im ribu iskvarimo. Pa neka im bude kad neće da slušaju kad mi i dica jedu srdelu.

Sićan se, bilo je to jednom početkom veljače kad nije bilo posla i moga san doma kuvat. Dobija san friške srdele i počeja ih čistit kad je moj stariji sin, ča je tek prohoda, ali još nije počeja govorit, doša do mene i otvorija kljun ka galebić. Kad šta, oće jist ribu.

Nije tija čekat pa san na stol poli sebe stavija pjatić sa maslinovim uljem, srdeli skinija kožu, odreza filet, provuka ga kroz ulje i stavija malome u kljun. Napravija je on onda đir po stanu, vratija se natrag i tražija još. Izija je tako 3 srdele i nije mu smetalo ča san ih zaboravija posolit.

Fešta nacionale

Dogodine je i mlađi počeja jist sirove srdele. Još dok su oba išli u vrtić njihova mater i ja smo se rastali pa su nekoliko godin dolazili kod mene jednom tjedno na ručak i naravno jili srdele. I danas, kad su obadva prošli dvadesetu, volidu doć kod mene par puti godišnje na feštu nacionale. Na stolu su srdele i moja riblja pašteta, pa nan to vridi više od svega drugoga.

Tako 7-8 većih srdela ugrijen na malo maslinova ulja u padeli toliko da meso mogu odvojit od kosti, a da ostane meko i sočno. Stavin to u pinjatu za salatu, dodam soli, papra, crvene paprike i između dlanova u prašinu satrte sušene bazilike. Sve to polako mućkan pirunom, dodajem maslinova ulja i onda najmanju konzervu tune. Dodan 3 mlječna namaza i to, ako je moguće, jednog sa češnjakom, jednog s zelenim povrćen i jednog običnog, pa sve zamišan.

Boja od medičine

Kad sinovi dojdu, skupa guštamo. Kruh narežemo na male bokuniće i svaki namažemo pašteton na debelo, gori stavimo fetu kapule i na to filet od srdele oliti sardona ča ih isto spreman. A one najboje srdele, ka i nekada, filetiran bez kože. Ne tribamo mi neku finu i skupu spizu, nama je srdela stvarno krajica stola, spiza za velike fešte.

Kad sam sam volin je friganu, ali malo drukčije nego drugi. Nikad je ne solin nego solin kukuruzno brašno u koje ih ubacim prije friganja. U padelu mi stane duzina, a stavljam ih ih dok se ulje još grije pa jedva malo procvrče. Kad stavin zadnju, već okrećem prvu i još pri nego izvadin zadnju, ugasin vatru. Salata i crno vino uz to i sve paše.

Volin srdelu i na salatu. Dva kuvana kumpirića, malo paštete, po duzine fileta isjeckanih na bokuniće, pokoja kapara, malo maslinova ulja i zelena salata oliti radić i onda iman gurmansku večeru. Iman ja još dosta riceta za srdelu u marinadi, ali se uvik sitin da su mi doturi govorili kako neću dočekat 40-u.

Malo morgen, prvi sin mi se rodija godinu dana posli krajnjeg roka života. Ko će ga znat koliko će mi još godin dati srdela na pjatu, ali svakako više nego ikakva medičina.
