Sezona rajčica i patlidžana primiče se kraju, a u njenom velikom finalu pronašli smo savršen recept. Baš za ispratiti je kako treba.

Blogerica Sandra Rončević, o kojoj smo vam pisali jer je zaljubljenica u putovanja i otkrivanje novih okusa te je izdala izvrsnu kuharicu O slanom i slatkom, otkrila nam je kako se priprema borani banjan, afganistanski složenac od nalancana, rajčica i puno opojnih začina.

Borani banjan

Sastojci (za 4 osobe):

3 srednje velika patlidžana

2 veće glavice luka

2 režnja češnjaka

5-6 zrelih rajčica

1 svježa ljuta papričica ili čili

1 žličica kurkume

½ žličice kumina

maslinovo ulje

mrva soli

zera papra

Za umak od jogurta:

150 g grčkog jogurta

150 g tekućeg jogurta

2 režnja češnjaka

1 žlica maslinova ulja

prstohvat soli

nekoliko listića svježe metvice

*po želji 2-3 prstohvata za‘atara

Priprema:

U zdjelici pomiješajte obje vrste jogurta, dodajte sol, maslinovo ulje i protisnuti češnjak pa sve dobro izmiješajte i ohladite.

Patlidžane operite, posušite, narežite na ploške debljine 1 cm, posolite ih i složite na pladanj i pustite da odstoje oko 15 min kako bi ispustili tekućinu. Potom ih dobro ocijedite pa ispržite u dobro zagrijanoj tavi u koju ste dodali par žlica masl. ulja. Pržite ih sa svake strane po par minuta dok ne omekšaju i ne dobiju lijepu zlatnu boju. Prebacite ih na tanjur prekriven papirnatim ubrusima kako bi se ocijedio višak masnoće.

Paralelno dok pržite patlidžane, napravite umak od rajčica. Luk narežite na tanke ploške, rajčice na manje kockice. Zagrijte dublju tavu, dodajte 2-3 žlice masl. ulja pa ubacite luk i pirjajte dok lagano ne omekša, oko 7-8 min. Dodajte protisnuti češnjak i nastavite pirjati još minutu, pa dodajte rajčice. Promiješajte, dodajte nasjeckanu ljutu papričicu, kurkumu i kumin, posolite i popaprite i pirjajte dok rajčica ne omekša i dok se ne reducira tekućina (oko 10 min).

U umak od rajčica dodajte polovicu patlidžana, protresite tavu i poklopite. Smanjite vatru i nastavite kuhati još 5 min, odnosno pustite da se patlidžani samo lagano „opare“ pod poklopcem. Protresite, lagano izmiješajte i prohladite.

Završite jelo: u veću zdjelu stavite polovicu hladnog jogurta, na jogurt dodajte umak od rajčica, gore složite pržene patlidžane, prelijte ostatkom jogurta, dodajte još malo maslinova ulja, listiće metvice i po želji pospite za‘atarom.

Sezona rajčica i patlidžana primiče se kraju, a u njenom velikom finalu pronašli smo savršen recept. Baš za ispratiti je kako treba.

Blogerica Sandra Rončević, o kojoj smo vam pisali jer je zaljubljenica u putovanja i otkrivanje novih okusa te je izdala izvrsnu kuharicu O slanom i slatkom, otkrila nam je kako se priprema borani banjan, afganistanski složenac od nalancana, rajčica i puno opojnih začina.

Borani banjan

Sastojci (za 4 osobe):

3 srednje velika patlidžana

2 veće glavice luka

2 režnja češnjaka

5-6 zrelih rajčica

1 svježa ljuta papričica ili čili

1 žličica kurkume

½ žličice kumina

maslinovo ulje

mrva soli

zera papra

Za umak od jogurta:

150 g grčkog jogurta

150 g tekućeg jogurta

2 režnja češnjaka

1 žlica maslinova ulja

prstohvat soli

nekoliko listića svježe metvice

*po želji 2-3 prstohvata za‘atara

Priprema:

U zdjelici pomiješajte obje vrste jogurta, dodajte sol, maslinovo ulje i protisnuti češnjak pa sve dobro izmiješajte i ohladite.

Patlidžane operite, posušite, narežite na ploške debljine 1 cm, posolite ih i složite na pladanj i pustite da odstoje oko 15 min kako bi ispustili tekućinu. Potom ih dobro ocijedite pa ispržite u dobro zagrijanoj tavi u koju ste dodali par žlica masl. ulja. Pržite ih sa svake strane po par minuta dok ne omekšaju i ne dobiju lijepu zlatnu boju. Prebacite ih na tanjur prekriven papirnatim ubrusima kako bi se ocijedio višak masnoće.

Paralelno dok pržite patlidžane, napravite umak od rajčica. Luk narežite na tanke ploške, rajčice na manje kockice. Zagrijte dublju tavu, dodajte 2-3 žlice masl. ulja pa ubacite luk i pirjajte dok lagano ne omekša, oko 7-8 min. Dodajte protisnuti češnjak i nastavite pirjati još minutu, pa dodajte rajčice. Promiješajte, dodajte nasjeckanu ljutu papričicu, kurkumu i kumin, posolite i popaprite i pirjajte dok rajčica ne omekša i dok se ne reducira tekućina (oko 10 min).

U umak od rajčica dodajte polovicu patlidžana, protresite tavu i poklopite. Smanjite vatru i nastavite kuhati još 5 min, odnosno pustite da se patlidžani samo lagano „opare“ pod poklopcem. Protresite, lagano izmiješajte i prohladite.

Završite jelo: u veću zdjelu stavite polovicu hladnog jogurta, na jogurt dodajte umak od rajčica, gore složite pržene patlidžane, prelijte ostatkom jogurta, dodajte još malo maslinova ulja, listiće metvice i po želji pospite za‘atarom.

Sezona rajčica i patlidžana primiče se kraju, a u njenom velikom finalu pronašli smo savršen recept. Baš za ispratiti je kako treba.

Blogerica Sandra Rončević, o kojoj smo vam pisali jer je zaljubljenica u putovanja i otkrivanje novih okusa te je izdala izvrsnu kuharicu O slanom i slatkom, otkrila nam je kako se priprema borani banjan, afganistanski složenac od nalancana, rajčica i puno opojnih začina.

Borani banjan

Sastojci (za 4 osobe):

3 srednje velika patlidžana

2 veće glavice luka

2 režnja češnjaka

5-6 zrelih rajčica

1 svježa ljuta papričica ili čili

1 žličica kurkume

½ žličice kumina

maslinovo ulje

mrva soli

zera papra

Za umak od jogurta:

150 g grčkog jogurta

150 g tekućeg jogurta

2 režnja češnjaka

1 žlica maslinova ulja

prstohvat soli

nekoliko listića svježe metvice

*po želji 2-3 prstohvata za‘atara

Priprema:

U zdjelici pomiješajte obje vrste jogurta, dodajte sol, maslinovo ulje i protisnuti češnjak pa sve dobro izmiješajte i ohladite.

Patlidžane operite, posušite, narežite na ploške debljine 1 cm, posolite ih i složite na pladanj i pustite da odstoje oko 15 min kako bi ispustili tekućinu. Potom ih dobro ocijedite pa ispržite u dobro zagrijanoj tavi u koju ste dodali par žlica masl. ulja. Pržite ih sa svake strane po par minuta dok ne omekšaju i ne dobiju lijepu zlatnu boju. Prebacite ih na tanjur prekriven papirnatim ubrusima kako bi se ocijedio višak masnoće.

Paralelno dok pržite patlidžane, napravite umak od rajčica. Luk narežite na tanke ploške, rajčice na manje kockice. Zagrijte dublju tavu, dodajte 2-3 žlice masl. ulja pa ubacite luk i pirjajte dok lagano ne omekša, oko 7-8 min. Dodajte protisnuti češnjak i nastavite pirjati još minutu, pa dodajte rajčice. Promiješajte, dodajte nasjeckanu ljutu papričicu, kurkumu i kumin, posolite i popaprite i pirjajte dok rajčica ne omekša i dok se ne reducira tekućina (oko 10 min).

U umak od rajčica dodajte polovicu patlidžana, protresite tavu i poklopite. Smanjite vatru i nastavite kuhati još 5 min, odnosno pustite da se patlidžani samo lagano „opare“ pod poklopcem. Protresite, lagano izmiješajte i prohladite.

Završite jelo: u veću zdjelu stavite polovicu hladnog jogurta, na jogurt dodajte umak od rajčica, gore složite pržene patlidžane, prelijte ostatkom jogurta, dodajte još malo maslinova ulja, listiće metvice i po želji pospite za‘atarom.
